           There are too many ways to prepare coffee. We (humans) have complicated a wonderful thing.  We have French Press, Brazilian Press, Vietnamese Drip (Phin Filter), Pour Over, Espresso, Turkish Brew... and hundreds more that we don't even know about. Each method requires it's own special grind.  So me and my boy Chat put our heads together and this is what we came up with:

No, again it is up to the drinker.  I plan to host cuppings or, as I prefer to call them, tasting parties and we will explore two or three of these methods, along with the traditional cupping method.  This will give the guest a great experience of the different tastes that comes from the different brewing method (and yes, there is a difference). It will also give them a strong buzz, so we might need to host these tastings on Friday Nights.

           The Perfect Cup or Brew?
          &#xD;
    &lt;/strong&gt;&#xD;

    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

    &lt;span&gt;&#xD;
      
           Okay, Coffee Lovers. If you’ve known me for a day or two, you have come to the conclusion that I am weird. I am weird and I think differently than most people and that’s okay… you will catch up soon (kidding… calm down).
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Someone once asked me, “How do you make the perfect cup of coffee.”
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           I looked them in the eye and told them this truth: “The perfect cup of coffee is in the palate of the drinker. Some drink it black while some will sweeten their brew with sugar or other sweetener. Some will even add milk or cream. I knew one guy who would toss a shot of espresso into his Dr. Pepper. In short, achieving the perfect cup of coffee is a user dependent task.”
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            They looked at me as if I completely missed a target on a grenade range.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           “No,” they stammered. “How do you make the perfect pot of coffee?”
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Therein lays the problem: the English Language.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           If you want the perfect cup of coffee, that is up to you. Add or take out whatever you want. It’s your taste buds, it’s your drink, and it’s your responsibility. And remember, it’s your morning buzz (or lack of buzz for the decaf crowd) don’t mess it up. But my take is this, if it takes you more than 3-words to order your coffee, you aren’t drinking coffee. You are drinking a coffee flavored beverage.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           But if you are looking for the perfect “Brew”… well that is a different animal. Now let’s skin this cat together.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;h1&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Part 1 - Different Roasts
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h1&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Make sure you select a nicely roasted coffee that will help you meet your taste expectations. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           1.     Do you like the fruity and somewhat tangy flavor of coffee?  That sip that makes you wonder if someone put a bit of lemon in your cup. Or do you like the slightly floral notes of coffee that will please you during the slurp fest and then slap you with a caffeine jolt 20 minutes later? If so, you want a Light Roast. Light roast is the roast used at many competitions where they rate coffee almost like they categorize wines. It is a great taste, but one that definitely takes a refined palate to enjoy as a daily grind.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.     Do you want a balanced and smooth flavor from your coffee?  Do you want a drink that has the full body of coffee that matches the aroma of the fresh ground beans? A coffee that sips fine and does not mess with your acid reflux? Well, Skippy, I recommend a Medium Roast. Most coffee drinkers fall in to this category and most roasters will use the medium roast to highlight their coffees.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            3.     What if you like the bold and slightly smoky taste of coffee?  Sounds like you want the cowboy stuff. The coffee that will get your attention real quick and stick on your tongue until you eat the mint from your Sonic Meal… I recommend a Dark Roast. I used to be anti-dark roast, but some coffee growers tell me their beans hold up well with a darker roast and they preferred it for that particular bean.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

           The Truth and Only the Truth:

           I spent many years with the Intelligence Community and  felt betrayed by the lack of support I  received "post-mission."  I had started keeping a journal to help me control my anger and try to calm my dreams but the progress was slow.  A great friend looked at my journal and told me it would make for a great novel.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

           Well, that was a great idea... until I published my second book and had the door of my house rudely kicked in by Law Enforcement and all my computers and phones were confiscated and shipped off to Washington D.C.  They returned all the items (after 89 days), except for a blackberry phone, and "apologized" for the inconvenience.  That book (Life and Times of Biff Baxter: Restricted Access) became one of my best sellers coming in behind some diet book called "
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Hunger Games"
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           . wink wink
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

            I continued writing and attending book signings whilst still getting harassed by different Federal Law Enforcement agencies. None of my writings are classified. But I do stick to the truth, and, as you have figured out, the truth hurts some peoples feelings. 
           &#xD;

    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

            So it is with coffee.  Coffee has been harassed by health scares, misinformation, and straight up lies by so called leaders claiming to look after our best interest. 
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The Truth is: Coffee is wonderful when handled with respect, care, and (corny moment) Love.  I have traveled the world and have enjoyed coffee with many different people in many different countries. I have enjoyed all the coffee fellowship and came to this amazing conclusion:  Earthlings are awesome.  People are friendly and caring. Politicians and Governments are evil.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

      &lt;span&gt;&#xD;

           Why do we drink Coffee?
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            I have always been curious about the reason people drink coffee. I went looking for studies and it seems that many have been conducted about coffee.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           According to “experts”, the reasons people drink coffee include: for the increase of energy, improve alertness, potential health benefits, and as I have witnessed on my trips to other countries, it is a significant social and cultural activity.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            But very few studies have identified the ONLY reason I drink coffee… I love the taste. The uniqueness of coffee from different regions of the world is impressive and tasting these different offerings is exciting!
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            And here is my biggest dilemma… bitter coffee. There is no reason for bitter coffee or coffee that tastes “sour”. We are about a seed of a beautiful cherry that, when treated with love and respect, will always give you great taste.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            I am proud to say we have never roasted a bitter coffee and that happens when two criteria are met:
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           1.      The source of our green coffee bean is legit and they provide us with the best beans in the industry, and
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.       The roasting process focuses on taste over profit.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           There are so many businesses popping up selling coffee that it is robbing the community of the true meaning of coffee, and quite frankly, tarnishing the coffee name. I have seen ads for “drop ship” coffee stores. You don’t have to do a thing except provide a name and you have your own coffee brand… and you don’t even have to taste it… that is WRONG!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           What is even wronger… is going into one of those chain coffee shops and asking the clerk “what do you recommend?” And their answer is “oh, I don’t drink coffee.” My brain is hurting.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           At Covert Coffee, we take our time with the roasting process. Our coffee trader provides us with the best beans from around the world. They alert us on the harvest dates and when they expect to receive the new beans. We then review the region from which the beans have come, and look for recommendations by the grower and the trader on the best roasting profiles. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Our team will hand-roast four ounces at different roasting levels and conduct a taste test. (note: future plans are to invite a limited number of Super-Spy members to join us in the tastings).
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           We then small batch roast the coffee at the level we believe meets the growers and traders recommendation and our taste preferences. THIS is the only way to honor the coffee plant, the growers’ experience, and the traders’ knowledge. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
